When the days get a bit cooler and fall comes around I think of pork roast and this is my go-to recipe. I like to pair it with Red Cabbage and Apple Sauté. It's important to cook the roast in a shallow pan and on a rack so the heat can circulate evenly around it. I recommend a roasting rack that is a nonstick, adjustable V-shaped rack so you can move the wires to fit the roast or poultry you are cooking. Check to make sure you have a roasting pan that fits the rack. Vicki
