Dover sole is known for its mild, buttery, sweet flavor and flaky texture.  Dover sole got its name from being caught mostly near Dover, an English port in the 19th century. Over the past hundred years or so Dover sole can now be caught in the wild in other parts of the world and is also being farmed on a limited basis.  This recipe is quick and easy and can be in and out of the oven in less than 10 minutes.  It's best to bake this fish to help keep it whole.  When Dover sole is sautéed it tends to fall apart easily.
