Raw Sweet Potatoes and Parsnips Salad

I know this recipe sounds strange, but trust me you will like it. Think carrot salad, but sweeter.  Sweet potatoes are packed with nutrients and are an orange vegetable so are high in beta-carotene.  I first came up with this recipe in 1998 while working as the executive chef for a leading all vegan vegetarian resort.   Vegan is a term meaning only vegetables, no dairy, eggs, or meat.  If it comes from an animal, a vegan will not eat it. The surprise ingredient in this dish is the parsnip.  They are white and look like carrots and even have the texture of a carrot.  The flavor is that of a super sweet carrot with a hint of ginger.  Chef Dave
