This dish is made with red potatoes and because the skins are soft enough when cooked, they can be eaten so there is no need to peel them. Then add real butter, fresh garlic, and parsley, and this dish could not be any more simple. Parsley has an earthy flavor and adds color to this otherwise bland looking dish. We highly recommend using fresh parsley, not dried, because it is a main ingredient in the recipe.
