If you're looking for a casserole with a some Mexican spice, this is your recipe. We like to use corn tortillas because they are much lower in sodium than flour tortillas. If you have had weight loss surgery, corn tortillas are less likely to "get stuck" than flour tortillas. Be sure to follow the directions to let this sit for 15 minutes before serving so it can firm up.
