If you want to cut the cholesterol, use 2 cups (500 mL) of liquid egg substitute to replace the fresh eggs. For a timesaver, use rotisserie chicken from the grocery store. Serve this with a slice of whole wheat toast and a bowl of fresh fruit for breakfast or a whole wheat roll and a salad for lunch or dinner.
