Rice cakes have been traditionally looked at as a "diet food." The problem is that rice cakes are not filling. You would have to eat a lot of them to feel full and that means more calories. So take that rice cake and add a topping, like we've done here, to add some substance to it. The ricotta cheese is a good source of protein and that's going to be more satisfying than a plain rice cake. Rice cakes are gluten free and very low in sodium. Vicki
