Be sure to use fresh onions for this recipe and not the frozen onions you can find in the freezer section at the store for this dish. Those onions are cut too small and will make this dish a failure.  Fresh is definitely better when preparing this dish. The red peppers add a unique sweetness to this stew.  The tomato paste thickens this dish so add more if you would like your dish thicker or less if you would like it thinner.
