"It's a small world"... but not the portion sizes. We had dinner at one of the in-park restaurants that served only sandwiches and salads. As I was standing in line with my tray, I saw that the gal was slicing and weighing out each portion of beef and turkey on a food scale. I was happy to see this but when I asked how much was the weight of meat for each salad, I was told it was 6 ounces. A standard serving is 3 ounces so once again, people are given double servings. The Happiest Place on Earth

Disneyland, The Happiest Place on Earth. Walking around the park it's easy to see why Americans are called the fattest country on earth. It is sad to see so many overweight children.

We are visiting here with my two grandsons, age 2 and 4, neither of whom are overweight. Interesting to see that they both stop eating when they have reached the point of full.The ice cream was left to melt because they knew they were finished. Would appreciate seeing a lot more low cal recipes

How are you?  I have to say that I have been seeing your name now on the internet and in weight loss magazines.  I had RNY 9/2/09 and I am down 138 lbs with 1 pound left to goal.  Not many people inspire me but you have been.

I just signed up for your newsletter and am looking forward to following your achievements and trying out some of your recipes.  I try and keep my calories low so would appreciate seeing a lot more low cal recipes.

Is it ok to occasionally use one of your recipes?

Chef Dave,

Hope this finds you well.  I have been enjoying your recipes, and looking forward to getting your new cookbook. I have a question for you.

I am a bariatric patient and the bariatric coordinator for a hospital in Seattle. We send out a monthly newsletter. Our patients have been asking us to include a recipe each month. Is it ok to occasionally use one of your recipes and make sure we credit to you and direct them to your web site?

I will be having the bariatric bypass operation now in May 31! Im excited although like anyone else, a bit nervous.. I have been following your internet page and your cooking methods and they are really great and very inspirational! I live in San Juan, Puerto Rico and I do not find your WLS channel here which is very dissapointing ;-( but, hoping that I can keep learning and addapting your knowledge and experience,  I recently graduated as a Pastry Chef and I of course need to learn how to adapt new recipies that I can use for myself…

An American Eating in Canada

Well, I moved to Vancouver, British Columbia (BC) in September of last year. It may be only 30 miles over the border, but it is another country. Being a dietitian, I am fascinated by the differences in eating behaviors and lifestyles compared to the US.

Just made my fresh salsa

I just found your site, and welcome your newsletter!!  Cilantro is a love/hate, and I love, love, love!!  Just made my fresh salsa.  Instead of hot jalepeno - or however you spell it - I use a red pepper.   I do not put my in a processor - I dice by hand for the chunkiness.   Love it!

I’m looking forward to your recipes.   This bariatric diet is getting boring, and I'm only 6 1/2 months out!!

I am so very glad you decided to dedicate your trade to helping fat people. I went on your website, it was suggested to me by my nutritionist, and I love some of the recipes. I had the lap band procedure done on 4/1/10, and the same old boring foods get tedious after a while. Again, thank you for the wonderful recipes of things I can actually eat.

Limit your intake of processed foods.

You may think you're eating healthy but if you are eating a lot of highly processed foods you are wrong. Did you know that about 75% of daily sodium intake comes from salt added by food manufacturers? Michael Pollan's "In Defense of Food" is book worth reading if you care about what you eat. Just remember this advice from his book and you will improve your health. Fresh is best!

White Bread

I was out and about running errands and lunch time arrived. I ran into Subway to get a quick bite. There was an older gentleman in line in front of me. He wanted his sandwich on whole wheat and was told they were out of whole wheat. He grimaced. They offered him white bread. He made another face and walked out without ordering. Maybe if we all grimaced at the thought of eating white bread and walked out of the restaurants we might get more eating establishments offering whole wheat bread in addition to the empty white bread.
