I was reading your Bio online when I came across the part where you mentioned that obese people don't cook; they eat out all the time. God that was an epiphany, I have rarely cooked most of life. My niece used to joke that she loved how I cooked, "Hello, do you deliver?" I'm making the commitment to try a new recipe at ...least once a week. I'm 3 months out from a gastric bypass revision and I'm gonna learn to cook!

I will be having the bariatric bypass operation now in May 31! Im excited although like anyone else, a bit nervous.. I have been following your internet page and your cooking methods and they are really great and very inspirational! I live in San Juan, Puerto Rico and I do not find your WLS channel here which is very dissapointing ;-( but, hoping that I can keep learning and addapting your knowledge and experience,  I recently graduated as a Pastry Chef and I of course need to learn how to adapt new recipies that I can use for myself…

Just made my fresh salsa

I just found your site, and welcome your newsletter!!  Cilantro is a love/hate, and I love, love, love!!  Just made my fresh salsa.  Instead of hot jalepeno - or however you spell it - I use a red pepper.   I do not put my in a processor - I dice by hand for the chunkiness.   Love it!

I’m looking forward to your recipes.   This bariatric diet is getting boring, and I'm only 6 1/2 months out!!

I am so very glad you decided to dedicate your trade to helping fat people. I went on your website, it was suggested to me by my nutritionist, and I love some of the recipes. I had the lap band procedure done on 4/1/10, and the same old boring foods get tedious after a while. Again, thank you for the wonderful recipes of things I can actually eat.

Hey Chef Dave,

I was thumbing through my Edmond Monthly when I ran across your recipe for Chicken Valencia.  The picture of the dish caught my eye.  I read the recipe, and thought this is something I can do, so I added all the ingredients to my shopping list.  Dinner rolled around last night and I decided to whip it up.  My son came rolling through the kitchen and asked what I was making.  I told him to look at the magazine, and he said, “Mom, that’s Chef Dave!”
