Hey Dave,

How are you?  I have to say that I have been seeing your name now on the internet and in weight loss magazines.  I had RNY 9/2/09 and I am down 138 lbs with 1 pound left to goal.  Not many people inspire me but you have been.

I just signed up for your newsletter and am looking forward to following your achievements and trying out some of your recipes.  I try and keep my calories low so would appreciate seeing a lot more low cal recipes.

Is it ok to occasionally use one of your recipes?

Chef Dave,

Hope this finds you well.  I have been enjoying your recipes, and looking forward to getting your new cookbook. I have a question for you.

I am a bariatric patient and the bariatric coordinator for a hospital in Seattle. We send out a monthly newsletter. Our patients have been asking us to include a recipe each month. Is it ok to occasionally use one of your recipes and make sure we credit to you and direct them to your web site?

What suggestions would you have for a Chef, who is thinking about having Gastric Bypass. He is concerned about being a chef and tasting the foods that he prepares...did you find this to be a bother? I recently met you at the Carson City support group meeting and again, thank you for speaking to us and making your book available. I have shared a few of the recipes with a co-worker who is diabetic and she is thankful.

My question, when it comes to baking, can you substitute whole wheat natural flour in recipes calling for all-purpose flour? Does it matter? Is there a difference? What other ingredients may need to be added/substituted when doing this?

How Do I Keep Chicken Moist?

Hi Chef Dave,

My name is Christine and I’m 4 months post-op. I’ve lost 82 pounds so far but in the past month I’ve been having problems with digesting chicken. Do you know of any different ways to cook chicken where it stays moist? I’ve tried putting the chicken in Pam olive oil spray and Mrs. Dash but that seems to dry out.
