- Boil tapioca in water. Stir constantly to keep the bottom from sticking. The tapioca is done when it is nearly all clear (no more white balls).
- Add sugar substitute to the boiling tapioca. Add the coconut, stir and bring it back up to a boil then turn the heat off.
- In a small cup, dissolve salt in coconut milk and warm it up in a microwave for a few second. Don't let the coconut milk boil.

Fiddling Around
Moving to the rainforest climate of Vancouver from the high desert of Northern Nevada has been a huge weather adjustment for me. The vegetation here is lush and plentiful. Ferns grow in our yard like weeds. In Nevada, I couldn't keep a fern alive in my home. The change in climate has given me the opportunity to try all sorts of new foods.
